Our homemade banana loaf cake is covered in a delicious vanilla cream cheese cinnamon frosting, made with our vanilla flavor powdered sugar. It's moist and delicious, with a hint of sweetness that will tantalize your taste buds.
INGREDIENTS: CAKE
- 1 1/2 cups buttermilk
- 1 1/3 cup mashed brown bananas
- 2/3 cup softened salted butter
- 1/4 cup white sugar
- 1 1/4 cup brown sugar
- 3 eggs
- 1 tsp. Vanilla
- 3 cups flour
- 1 1/2 tsp. Baking soda
- 1/4 tsp. Salt
- 1 tsp. Cinnamon
- 1/4 tsp. Nutmeg
INGREDIENTS: VANILLA CREAM CHEESE CINNAMON FROSTING
- 1 stick softened butter, salted
- 4 oz cream cheese softened
- 4-5 cups Whipzi™ vanilla flavored powdered sugar
- 1 -3 tbspns heavy cream
- 2 tsp. Cinnamon
- Dash of nutmeg
INSTRUCTIONS: CAKE
Beat butter and sugars together until light and fluffy. Add in eggs and vanilla and mix until combined. Next fold in bananas. In another bowl, whisk your dry ingredients together. In alternating batches, add your flour to the banana mixture, mix, and then add buttermilk to the banana mixture. Alternate until it’s all incorporated. Spray/line with parchment paper a loaf pan. Add batter to pan.
Bake at 350 degrees for 45-60 minutes or until cooked all the way through and golden brown.
INSTRUCTIONS: FROSTING
To make the frosting, add all ingredients to a stand mixture. Cream until light and creamy. Frost your cake once completely cooled. Top with more bananas if desired!
