OATMEAL CREAM PIES WITH A STRAWBERRY CREAM FILLING

Love is in the air so we took old-fashioned Oatmeal Cream Pies and made a strawberry cream filling using our Whipzi™ strawberry flavor powdered sugar - what's not to love about that!

INGREDIENTS: OATMEAL PIES

  • 1/2 cup unsalted butter, room temperature
  • 1 cup light brown sugar
  • 1 tbpn molasses
  • 1 egg, room temperature
  • 1 tsp. vanilla extract
  • 1 1/4 cups all purpose flour
  • 1/2 cup old fashioned oats
  • 3/4 tspn baking soda
  • 1/2 tspn salt

INGREDIENTS: STRAWBERRY FILLING

INSTRUCTIONS: PIES

Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper. 

Using a stand mixer with paddle attachment, combine the butter, brown sugar and molasses. Beat until fluffy, about 3-5 minutes, scraping down side halfway through. Add the egg and vanilla extract and mix for another minute. 

In a medium bowl, combine the flour, oats, baking soda and salt. Add these dry ingredients slowly to the stand mixer until fully combined. 

Using a small cookie scoop, scoop the dough mixture onto the parchment lined pan, into balls about 2" apart (they do spread and rise)

Bake for 10 minutes or until the edges are golden brown, and the centers have puffed up but are still slightly underdone. Transfer to a wire rack and allow to cool completely. 

INSTRUCTIONS: FILLING

Using the stand mixer with paddle or whisk attachment, combine all the ingredients and beat slowly, gradually increasing speed until light and fluffy. Transfer to a piping bag with a round tip and pipe the cream filling onto the backside of one of the cookies and sandwich together.  Roll in sprinkles if desired.
