INGREDIENTS: CAKE
- 1 (15oz) can pumpkin puree
- 1 cup white sugar
- 2/3 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups all-purpose flour
- 2 tspn pumpkin spice
- 2 tspn baking powder
- 1 tpsn baking soda
- 1 tspn salt
INGREDIENTS: FROSTING
- 1 stick salted butter, softened
- 8oz cream cheese, softened
- 4 cups Whipzi™ pumpkin spice flavor powdered sugar
- 1 tblspn vanilla
- 2-4 tblspns heavy cream
INSTRUCTIONS: CAKE
Preheat the oven to 350 degrees F (175 degrees C). In a medium bowl, beat pumpkin puree, sugars, oil, and eggs with an electric mixer until well combined. In a separate bowl, sift together flour, pumpkin spice seasoning, baking powder, baking soda, and salt. Stir into pumpkin mixture until thoroughly combined. Spread batter evenly into an ungreased 10" x 15" jelly roll pan. Bake in the preheated oven until cake bounces back when gently presses (25-30 minutes). Remove from oven and let cool.
INSTRUCTIONS: FROSTING
Beat cream cheese and butter until creamy. Beat in Whipzi pumpkin spice flavor powdered sugar, vanilla, and 2 tablespoons of heavy cream. Beat until light and fluffy, add more heavy cream to thin to desired consistency.
