INGREDIENTS: CAKE
- 1/2 cup sourdough starter discard
- 3/4 cup Whipzi lemon flavor powdered sugar
- 1/2 cup coconut oil (or vegetable oil)
- 2 eggs
- 1 1/2 cups all purpose flour
- 1 1/2 tspn baking powder
- 1/2 tspn salt
- 3/4 cup milk
INGREDIENTS: GLAZE
- 1/2 cup Whipzi lemon flavor powdered sugar
- 1 tspn milk (add additional milk, 1 tspn at a time for a thinner glaze)
INSTRUCTIONS
Preheat oven to 350 degrees. Prepare your loaf pan with cooking spray. Combine the coconut oil, eggs, and Whipzi lemon powdered sugar in a mixing bowl and mix well. In a separate bowl, mix the flour, baking powder and salt and add about 1/2 to the sugar mixture, mix, add 1/2 of the sourdough discard, mix, and repeat with remaining sugar and then sourdough discard. Pour the batter into your prepared loaf pan. Bake for 45-60 minutes until golden brown and toothpick inserted into the middle portion of the cake comes out clean. Cool in pan for 15 minutes before removing. To make the glaze add Whipzi lemon flavor powdered sugar with 1 tpsn milk or water and stir till combined. Add 1 tspn at a time until desired consistency. Pour over the cake and enjoy!
